Flaxseed Oatcakes
Whole grain breakfast pancakes made with rolled oats and ground flax seed. These oatcakes goes great with any kind of syrup or jam.

Ingredients
2 cups rolled oats …[$0.56]
2 cups milk or buttermilk…[$0.46]
2 tbsp ground flax seed …[$0.10]
2 large eggs …[$0.46]
½ stick butter melted…[$0.50]
½ cup raisins or any dried fruit…[$0.42]
½ cup all purpose flour or whole wheat flour…[$0.12]
1 tsp baking powder …[$0.04]
1 tsp baking soda …[$0.04]
½ tsp ground cinnamon …[$0.02]
¼ tsp salt …[$0.02]
Instructions
- Soak rolled oats and ground flaxseed in milk for a couple of hours or overnight.
- In a separate bowl mix up eggs, melted butter, and raisins then add this to the milk oat mixture.
- Finally add in all the dry ingredients to the wet bowl and mix together.
- On a greased griddle, add spoonfuls of batter to reach the desired size of pancake. Basically you cook these like any other pancake. Cook until one side is brown and then flip to brown the other side over medium heat.
